Karoo Mutton Curry — The South African Way

🍲 Karoo Mutton Curry — The South African Way

Serves 6 | Prep: 20 min | Cook: 2 hrs

What you'll need

  • 1.5kg Lamb from the Gateway to the Karoo (neck, shank or chop pack)
  • 2 onions, finely chopped
  • 4 garlic cloves, crushed
  • 1 tbsp fresh ginger, grated
  • 3 tbsp curry powder (medium or hot)
  • 1 tsp turmeric
  • 1 tsp cumin
  • 2 tomatoes, chopped
  • 2 medium potatoes, cubed
  • 1 cup water or stock
  • Salt & pepper to taste
  • Fresh coriander to serve
  • Oil for frying

Method

  1. Heat oil in a heavy pot. Brown the mutton in batches and set aside.
  2. In the same pot, fry onions until golden. Add garlic and ginger, cook for 2 minutes.
  3. Add curry powder, turmeric and cumin — stir for 1 minute until fragrant.
  4. Add tomatoes and cook down for 5 minutes.
  5. Return the mutton to the pot. Add water or stock, season well.
  6. Cover and simmer on low heat for 1.5 hours, stirring occasionally.
  7. Add potatoes and cook for a further 30 minutes until tender.
  8. Serve with rice, roti or fresh bread — and a generous handful of coriander.
