🍲 Karoo Mutton Curry — The South African Way
Serves 6 | Prep: 20 min | Cook: 2 hrs
What you'll need
- 1.5kg Lamb from the Gateway to the Karoo (neck, shank or chop pack)
- 2 onions, finely chopped
- 4 garlic cloves, crushed
- 1 tbsp fresh ginger, grated
- 3 tbsp curry powder (medium or hot)
- 1 tsp turmeric
- 1 tsp cumin
- 2 tomatoes, chopped
- 2 medium potatoes, cubed
- 1 cup water or stock
- Salt & pepper to taste
- Fresh coriander to serve
- Oil for frying
Method
- Heat oil in a heavy pot. Brown the mutton in batches and set aside.
- In the same pot, fry onions until golden. Add garlic and ginger, cook for 2 minutes.
- Add curry powder, turmeric and cumin — stir for 1 minute until fragrant.
- Add tomatoes and cook down for 5 minutes.
- Return the mutton to the pot. Add water or stock, season well.
- Cover and simmer on low heat for 1.5 hours, stirring occasionally.
- Add potatoes and cook for a further 30 minutes until tender.
- Serve with rice, roti or fresh bread — and a generous handful of coriander.
